With the cooler weather upon us, our Park Canyon residents will not doubt enjoy not only the weather, but some great eats that are just right for fall.

When you want something to warm you up on a cool fall evening, consider making this flavorful corn chowder.

Recipe:

2 cans Cream of Potato Soup
2 cups cooked chicken*
1/4 cup onion (chopped)
3 oz. cream cheese
1 tbsp margarine
1 1/2 cup milk
1/4 cup celery (chopped)
1 can white whole corn
Pepper to taste

Saute margarine, onion and celery together.  Add soup, cream cheese and milk to pan and stir until cream cheese has completely melted.  Add the corn and chicken last.  Serve and enjoy

* Substitute shrimp, crab or crawfish
