The holiday season is upon us and soon the smells of those delicious holiday aromas will have us watering at the mouth.  Sweet potatoes, in some form or fashion, have always been a favorite dish here in the south around Thanksgiving in the form of a casserole or simply baked.  But have you ever had Sweet Potato Dumplings?  This is a recipe worth trying if you are looking for something new to add to your holiday meal menu.

Sweet Potato Dumpling Recipe

  • 1 (8-count) roll crescent rolls
  • 4 frozen sweet potato patties
  • 1 cup water
  • 1 cup sugar
  • 6 tablespoons of butter (or 1 stick)
  • 1/2 tablespoon cornstarch
  • 1 teaspoon of vanilla extract
  • Cinnamon for sprinkling on top

Cut each sweet potato patty in half.  Roll each half in a crescent roll triangle (start with the wide end of the crescent roll)

Lay each roll in a glass baking dish with the pointy end of the crescent roll down.  Sprinkle cinnamon on the raw rolls.

Combine the water, sugar and cornstarch in saucepan and mix well on medium heat.  When this mixture starts to heat/foam, add the butter.  Continue heating until the butter has melted and the sugar has dissolved.  The final mixture should be fairly thick.

Pour sugar mixture over the dumplings.

Place dish in a preheated 350 deg oven for 35 to 40 minutes.

Serve and enjoy!
